The kir royale is a lovely classic French Champagne cocktail. It’s light, a little bit sweet, pretty, and bubbly, and it’s also super simple to make! To make a kir royale cocktail, you’ll add a little bit of crème de cassis to your champagne flute and then top with your champagne (or other sparkling wine). Garnish with a few raspberries, and enjoy!

Sparkling Wine: For my kir royale, I start with a chilled, dry sparkling wine, similar to what I use for mimosas. I choose one I enjoy, without breaking the bank ($25 to $40 is my sweet spot). Champagne, Cava (from Spain), American sparkling wine, or dry Prosecco (from Italy) all work well. Cava and Prosecco are usually the most affordable. Crème de Cassis: I add a small splash of crème de cassis, a sweet and delicious blackcurrant liqueur. A little goes a long way! For a different flavor, substitute crème de framboise (raspberry), Chambord (black raspberry), or crème de pêche (peach). Fresh Raspberries (Optional): I love adding a few fresh raspberries to my champagne flute for an extra touch.
