Ricotta Pancakes Recipe Nigella Lawson Ricotta Hotcakes Edible Garden

Before I got into how to make Nigella Lawson’s awesome ricotta hotcakes, a word about ricotta cheese. A few words, actually. Ricotta cheese is soft and crumbly, a cheese made with fresh whole milk and whey leftover from making cheese. A good substitute would be fresh paneer that hasn’t been pressed into a block. You can make paneer, hang the cheese in a cheesecloth for a while and then use the resulting fresh, crumbly paneer the same way I have used ricotta in this recipe....

Roasted Asparagus Recipe

Roasted asparagus is the best spring side dish! Ready in 15 minutes, it’s so easy to make. Just trim the asparagus’s woody ends, toss it with olive oil, salt, and pepper, and pop it in the oven. Roasted asparagus is also delicious. The spears are juicy and tender (NOT stringy or mushy), and their tips are browned and crisp. I could happily eat oven roasted asparagus straight off the baking sheet....

Roasted Cauliflower Steaks Recipe

Cauliflower is one mighty veggie – it’s can transform into rice, a creamy dip or queso, and even mashed potatoes! But sometimes, I crave it made simply. This caramelized cauliflower steak recipe is what I make on those days. Golden brown, tender, and savory, these roasted cauliflower steaks have become one of my favorite vegetarian main dishes. They’re not a side salad trying to be a meal, and there’s no fake meat....

Scalloped Potatoes Recipe

Scalloped potatoes always make me think of Easter. My family had them at our holiday dinner every year when I was growing up. Cheesy, rich, and comforting, they were my favorite part of the meal. I’d happily skip the Easter ham and go back for a second serving of scalloped potatoes instead! Since this classic dish is one of my Easter favorites, I wanted to share a recipe for it this spring....

Slow Cooker Chicken Meatballs Recipe

My family loves this slow cooker chicken meatball recipe. The sauce is from scratch and gets better and better as it slowly cooks in a crockpot. Then, you’ll drop in the meatballs and let them cook for about 1 hour. Since they gently poach in the sauce, the meatballs become extra tender and stay juicy inside. These chicken meatballs are similar to our turkey meatballs, but in that recipe, we cook the sauce and meatballs on the stove instead of in our slow cooker....

Stuffed Shells Recipe

These stuffed shells are saucy, cheesy comfort food at its best. I love the contrast of the chewy pasta with the creamy ricotta filling, and marinara – store-bought or homemade – is the perfect tangy accent for both. After I eat one helping, I always find myself back in the kitchen, unable to resist the allure of seconds. These stuffed shells are just that good! This stuffed shells recipe is easy to make (and make ahead!...

Tomato Thokku Recipe Thakkali Thokku Step By Step Recipe Edible Garden

I also find that adding a pinch of jaggery to tomato thokku really enhances the flavour. A pinch of sugar would work great too. Also, while adding whole pieces of tomatoes to the thokku gives it a nice bite, some may prefer a smooth tomato thokku to a chunky one. Now, a word about how I get the deep red colour in most of my dishes (in the recent past anyway)....

Vegan Coffee Cake Muffins Recipe

I’m heading to Chicago later this week and I’m trying to think warm thoughts… It’ll be all of 1 degree when I land… and, (brr), my skin just isn’t that thick anymore. These muffins are a variation of my absolute favorite childhood breakfast: my Grandma Kissel’s coffee cake. On cold snowy mornings, there was nothing better than waking up to smell of warm cinnamon-ey cake wafting through the house. Of course these are slightly healthier and also vegan – using almond milk instead of sour cream and coconut oil instead of butter....

My sweet breakfast kick continues. For over a year, I was on a nonstop savory & spicy breakfast kick. Next came the carrot-ey baked goods, and now we’re onto these vegan scones. Or I should say, the royal “we” are on to these scones. Jack loves them too, but my dirty secret is that he only has one or two out of every batch because I hide the extras in the freezer – where I know he will never look (well, until he reads this)....

Watercress Farro Salad With Tart Cherries Recipe

I have a confession to make – I am not only a terrible gardener, but I’m also a terrible herb gardener. They’re so easy to grow, but they’re oh-so-hard to remember to water. Lucky for me, my mom recently came to visit and planted tons of new herbs, including my favorites – basil and mint – just in time to include them in this salad. 20 Easy Peach Recipes

It’s peach season! For the next few weeks, I’ll come home with a bag of peaches after every trip to the farmers market or store. The season is just so short, so while it’s here, and fresh peaches are juicy, sweet, and abundant, I make it my goal to eat as many of them as I can. Each variety of summer or winter squash has its own unique taste and texture, and it lends itself well to different cooking methods and dishes. Artichoke Avocado Toast Recipe

Last weekend when I brought these artichokes home, I thought about re-assigning this task to Jack (he is the risotto stirrer and the pomegranate seed picker, among other useful things)....
